Menu

If you didn't already know, Matt and I have gone Paleo! Also known as the Caveman Diet, Primal Blueprint, etc...For the most part you DO eat: meat, veggies, fruit, nuts, seeds; you DON'T eat: grains, sugar, dairy, processed foods, beans, potatoes. There are the occasions where we don't stick to it so much, of course. Other changes include using coconut oil for cooking and coconut milk for cooking and drinking. It really isn't that difficult and it is working well for us, so far. A few people have asked, so I am just going to post a menu of what we ate this week. It is easier than explaining it all.

Dinners:
Spaghetti squash with meat sauce and salad
Pork shops with a Dijon maple sauce, spaghetti squash, salad, fruit
Chicken Cashew Stew
Sweet Potato Hash, Sausage, Eggs
Tilapia w/ Mango Salsa, slaw and avocado
Snacks:
nuts, seeds, fruit smoothies, veggies and dip, fruit strips
Breakfasts:
eggs, pancakes from almond flour, bacon

Sweet Potato Hash Recipe
(from Jillian Michaels' The Master Your Metabolism Cookbook)
1.5 lbs sweet potatoes, cubed
1 cup sliced red onion
1/4 tsp salt
1/2 tsp pepper
1 lg Granny Smith apple, cubed
1/2 tsp cinnamon
1 tsp maple syrup
1 (11-oz pkg) chicken apple sausage links

Precook sweet potatoes in microwave (covered) for about 4 minutes while you brown onion, salt and pepper in coconut oil. Add apple and cook, add cinnamon and sweet potatoes, cook for 5 minutes then add maple syrup. Slice up sausage links and add, heating through. Serve with eggs. Yum!
